Chicken tikka masala
Dinnersingredients:
• 3 tablespoons oil
• 1 onion, diced
• 4 cloves garlic, minced
• 1 tablespoon ground cumin
• 1 teaspoon salt
• 1 teaspoon ground ginger
• 1 teaspoon cayenne pepper
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon turmeric
• 14 oz can tomato sauce
• 1 cup heavy whipping cream
• 1 tablespoon sugar
• 2 teaspoons paprika
• 1 rotisserie chicken
• 1/2 teaspoon curry powder
directions:
1. heat onion and 2 tablespoons oil in pan until onions are translucent (~5 min)
2. stir in garlic and cook for 1 more minute
3. stir in cumin, salt, ginger, cayenne pepper, cinnamon, and turmeric. fry until fragrant (~2 min)
4. stir tomato sauce into mixture, bring to a boil and reduce heat to low. let simmer for 10 minutes.
5. mix in cream, sugar, and paprika. bring back to a simmer and stir often until sauce has thickened (10-15min)
6. in a separate pan, heat chicken and remaining oil over medium heat. add curry powder and stir, coating chicken
7. mix chicken into sauce. serve over rice
